The Big "O" Salad


Meet Oneka. Beautiful, spunky, fashionable, health conscience, mother, wife, God fearing, interior decorator and friend!
With that said, this salad gets it's name from her. Some like to call her "Big O", even though she probably weighs a buck 05! But another reason this salad carries this name, is it is packed full of yummy flavors! Onkea made this salad one day while we were having a play-date. Great play-date right?
Now it makes our menu a couple times a month! My husband and I both love it, and I can also give all the ingredients to the kids as well. (minus the lettuce..not quite there yet)
We also add chicken to the salad, but that is your choice! :)  Great with a slice of fresh bread.
Enjoy!

Ingredients: Any dark lettuce, organic frozen corn, olive oil, fresh asparagus, 1 avocado, fresh strawberries or bell peppers, Brianna's Poppy seed dressing

  1. Get your lettuce out and put in large salad bowl
  2. Heat up some of the corn in a skillet with a little olive oil, then remove and put in salad (to save time you could always do organic canned corn)
  3. Now add a little more olive oil and cook the asparagus
  4. Cut the asparagus in halves and add to the salad
  5. Wash and slice up your strawberries (or bell pepper) and add to the bowl
  6. Dice up your avocado and also add (mmm, my favorite part)
  7. You can now add your diced up chicken, if using (I like the already baked chicken to save time..guilty)
  8. Now toss with Brianna's Poppy seed dressing. (such a yummy treat dressing!)
FF (fun facts) Oneka's favorite snacks are: raw cashews, dark zone perfect bars and apple slices with peanut butter :) Another FF is Oneka and I like to do random texts to each other of one liners from whatever slammin hip hop song we are listening to...on any given day she can get a text from me saying: "Biggie biggie biggie cant you see" or "Imma be Imma be" and others (hehe) Love her. Her husband, Earl, married us in Acapulco, and they were one of the first to visit our first born in the hospital. Our lives have been enriched by meeting them :)

Be sure to call or maybe check the church website to make sure he is speaking. He is at Shoreline Christian Center. Some of you may not like the idea of a mega church...but I'm not asking you to join his church....just to go hear him!
P.S.S He could spank you at basketball any day.

  1. Erin... great post. I can't wait to try this salad! I am going to the store later and I am going to get all the ingredients. I will let you know how it comes out. Also, so fun to read about your relationship with Oneka (and Earl) and how they have impacted your life. I just love your blog and look forward to reading them. Keep it up!!
